Replace names with codes or roles. "Vendor A," "Employee 1," "the client." Keep a private key on your own machine to map them back.
Round or rescale numbers. Use percentages or bands, or multiply everything by a constant. The patterns survive; the secrets don't.
Describe instead of pasting. Rather than pasting a confidential clause, describe it: "Either party can exit with 60 days' notice, with a penalty if the client exits in year one."
Strip the extras. Delete columns you don't need. Check document headers, comments and tracked changes for names.
