Quick answer

How do you run a commercial kitchen's food safety records properly?

Build a simple system on HACCP principles: type your food authority's limits into one place, record temperatures, cooking, cooling, cleaning and allergen checks at fixed moments in each shift, write a three-part corrective action for anything out of range, and review the numbers weekly. The Kitchen Operations and Food Safety System from Bodhih Training gives you a file for each step.

Sound familiar?

You already feel the problem. Here is what it is costing you.

Records that exist but do not help

Temperatures in three hands in a notebook, missing on the busiest evenings, with no action written when something was out of range. They satisfy nobody and warn you of nothing.

Prep set by feel

Too much rice on a quiet Sunday, not enough chicken on a busy Saturday. Without pars by day and a waste log, overproduction and stock-outs look like bad luck.

Allergen information that breaks at one link

A matrix out of date after a supplier swap, an allergy note in small print on the ticket, a default sauce packed from habit. One weak link is enough.

Inspection anxiety

When the inspector arrives, the question is whether you can show what you do every day. A binder written two years ago does not answer it.

Now imagine this

Picture the next few weeks with the kit open beside you.

Picture tomorrow's opening. Before the first order you open the Kitchen Operations Workbook, and the Dashboard tells you which fridge drifted overnight, which cooling batch is still open, which certificates are expiring and which equipment check is due. The temperature poster on the wall shows your own authority's limits in your own handwriting.

As the shift runs, records sit at four fixed moments: opening, prep, mid-service and close. When the line fridge reads high, your cook follows the decision card and writes the three-part action without being asked. When an allergy note arrives, the ticket shows it in a banner, the station follows five steps and the pass seals and stickers the bag.

Then imagine Monday's twenty-minute review. You type sales and orders into the Weekly Trend sheet and read record completion, out-of-range actions, waste by reason and dispatch accuracy. You pick one change, give it an owner and a date, and brief it at the line-up.

Whether you start with the temperature poster tonight or the allergen matrix tomorrow, the kit gives you a file for each step of the kitchen's day, so you can build the system one sheet and one habit at a time.

A taste of Chapter 6

Large quantities of cooked food cool slowly in the middle, and some bacteria form spores that survive cooking and multiply while food cools. That is why many authorities set two-stage cooling: to a first temperature within a first time limit, then to fridge temperature within a total time. Rice, curries, stocks and sauces are the classic risks. Methods that work: shallow trays no deeper than a few centimetres, dividing a batch into smaller containers, ice baths with stirring, ice wands, and a blast chiller if you have one. Methods that do not: a deep pot on the bench, a lid that traps the heat, a hot pan in a full fridge. The Cooling Log records each batch: start time and temperature, the stage 1 reading and time, the stage 2 reading and time. It works out the hours from your times (typed as 24-hour hh:mm), compares them with the stage limits on Settings and marks the batch as passed, failed at stage 1 or 2, or still in progress.

Questions buyers ask

The Kitchen Operations and Food Safety System: FAQs

Read the free guideAlready bought? Resend my link

Can I use this with my staff?

Yes. Use every file with your own kitchen team within your own business under the personal licence: print the forms and posters, brief with the notices, train with the SOPs. Company, franchise and multi-site licences are available from solutions@bodhih.com.

Does it work in my country?

The method works anywhere, and the workbook uses whatever limits, units and currency you type on Settings. The dated rules sheet covers India, the UK, the US, Australia and New Zealand, Singapore, Dubai and the EU, and names the authority to check. Laws and limits need checking locally.

Will this kit make my kitchen compliant?

No kit can do that on its own. It is educational and gives you a working system and the records to run it. Compliance depends on what your kitchen does every day and on your local food authority's requirements, which you should check before you rely on any template.

What records does a restaurant kitchen need to keep?

It depends on your authority, but most expect evidence that you control your hazards: deliveries, fridge and freezer temperatures, cooking, cooling, reheating and hot holding, cleaning, allergen information, training, pest control and corrective actions. The workbook and the daily records pack cover each of these.

How do I write a food safety plan for a small kitchen?

Use the seven HACCP principles: find the hazards at each step, pick the critical points, set limits from your authority, decide how you monitor and correct, verify that it works and keep records. The template walks you through it in plain words; use your authority's own pack as the master if it provides one.

Does it work for a cloud kitchen with several brands?

Yes. The sample case is a delivery kitchen running two brands. The allergen matrix, dispatch checks, waste log and weekly trend all handle several brands from one kitchen, and Chapter 9 covers the dispatch station and virtual brands.

Can I use AI with it?

Yes, for drafting, summarising, prep suggestions from your own figures and training quizzes. The prompt pack has 29 prompts with what to check. AI never fills in or signs a food safety record, and customer or staff health details stay out of AI tools.

Does it cover menu costing or front of house?

No. This kit owns the kitchen's daily operations and food safety records. Recipe costs and pricing are in The Menu Costing and Engineering System, and service and the dining room in The Front-of-House Training and Rota Kit.

How can I measure my team's starting point?

If you want to measure your starting point, AssessAll offers related assessments sold separately: the Food Safety & Hygiene Judgment Certification, the Frontline Safety Leadership Judgment and the Standing Instructions and Follow-Through Assessment for Detail-Critical Work. They suit managers and staff who make food safety and follow-through calls every shift.

How do I turn this into a development plan?

Use the kit's 30/60/90 day plan for the kitchen, and for the habits behind it, Jobulary's guide to if-then plans shows how to turn one intention ("if a reading is out of range, then I write the three-part action") into a habit that sticks: jobulary.com/blog/implementation-intentions-if-then-plans-at-work.

How much does The Kitchen Operations and Food Safety System cost?

₹999 including 18% GST for buyers in India, or $29 for buyers outside India. One-time payment, no subscription, with an automatic invoice.

How do I get the files after paying?

Instantly. Your download page opens the moment payment succeeds, and a permanent download link is emailed to you. Download each file separately or everything in one ZIP.

What software do I need?

Any of the usual tools: Excel or Google Sheets for spreadsheets, Word or Google Docs for templates, Adobe Acrobat Reader, Preview, Xodo or GoodNotes for the fillable PDFs, and Google, Outlook or Apple Calendar for the calendar plan.

Can I get a refund?

Because it is a digital download, kits are not refundable once downloaded. We always refund a duplicate charge or a failed delivery, and if a file is corrupted and we cannot fix it within 3 working days. Full terms: bodhih.org/refunds.

Can my company buy this for a team?

Yes. Team and company licences, and workshops on this topic run by Bodhih Training, are available. Write to solutions@bodhih.com or call +91 99000 11601.
